Fair, Day & DeKlyne Foundry ORGANIZATION (1889 – 1894) ABOUT Fair, Day & DeKlyne was one of many foundries that made cast iron cookware and stoves in the Knoxville, Tennessee, area during the late 19th and early 20th centuries. Knoxville was a major center for cast iron production during the second half the 1800s. In the Appalachian Artifacts Collection there are a few pieces from this foundry and others in that region. Cast Iron Dutch Oven & Lid ARTIFACT IDENTIFIER: 1969.1.517 DATE: 1889 – 1894 ABOUT The dutch oven is a staple piece of cookware for people cooking with open fire. Its particular design—a shallow cast iron pot, often with legs, and a tight fitting lid with a raised lip—was well-suited and versatile for that purpose. It can be used to fry, stew, and even bake. It can sit on its legs or hang over the coals. When baking, hot coals are put both under the dutch oven and onto the lid. It was a common part of a household that cooked in a fireplace and if you were on the move and could only carry one piece of cookware, it was the best choice. This dutch oven, much of the other cast iron cookware in the Appalachian Collections, was made in Knoxville, East Tennessee, for a time and important center in cast iron production. From about 1810 through the 1860s, Eastern Kentucky, East Tennessee, and North Georgia produced large amounts of pig iron, the raw material for casting iron.
